Russell Hobbs 10006 Breadman Ultimate
I took delivery of my new machine yesterday, and of course had to try it immediately. I have been using a Panasonic breadmaker for about the last 5-6 years, and although the results were always excellent the shape of the loaf is difficult to cut, hence my purchase of the above which bakes a horizontal loaf.
I made one loaf - 2lb size 50-50 wholemeal and white flour baked on the wholemeal set programme with a dark bake and followed the recipe to the letter, apart from sugar which I thought was too much, so instead of 3 tbs used 2 tbs. The bread was excellent. Well risen and beautifully shaped. WONDERFUL to cut! The only complaint I have is that the mixing is noisy - so much so in fact that in comparison with my other machine, which is almost soundless, I would hesitate to use a timer programme overnight. When I have experimented with different programmes, I will report further.

Breadman Ultimate & Your Flour
The Breadman Ultimate is an excellent machine but do not expect it to work miracles.
My wife wanted a breadmaker and, on specification and budget, the breadman ultimate won.
She had never made bread before and was fed up of Supermarket bread, as were the whole family, so a breadmaker was ordered and was soon unpacked and put to work using one of the supplied
recipes.
The end result was not award winning but, coming from a long line of family bakers, I pointed out that it was all down to the flour and not a fault with the machine or the recipe.
Get a good flour and experiment on the amount of water required for that particular flour if need be.
I found that Safeway Strong white works best with the supplied Basic white bread recipe, substitute margerine for the oil and you will get a nicer loaf.
For 50% Wholemeal bread we use Hovis Granary Malted Brown Bread Flour mixed with the Safeway strong white. 260g of each flour, 250ml of water 2tbsp brown sugar, 3/4tsp salt, 2tbsp marg, 2 tsp yeast and away you go on the 2lb setting with dark crust.
Do not get disheartened and blame the machine when things do not work out, just remember that every flour is different and needs a different amount of water to produce the same result as that from another brand of flour.

It is Ultimate
What a superb machine. I have been making bread by hand for a few years, but got fed up with the inconvenience and mess, so I decided to get a breadmaker. I looked at one or two others but decided on the Breadman Ultimate.

Put simply the results are superb. The machine mixes well, proves the bread perfectly and bakes it to a lovely even gold colour. I have made about 20 loaves so far and they have all come out superbly. I should have bought one ages ago.

The instruction book is very clear and friendly but could go into a bit more detail on some of the machines features. The recipies in the book are good for a trial but I have changed back to my old favorites. (The recipe for white bread has 3 tablespoons of sugar in it; two is more like it!)

The bread, so far, has always released from the pan after a few shakes. The pan is nice and easy to clean, needing only a light wash in soapy water.

All in all brilliant; buy one today.
